MASHED SWEET POTATOES

Ingredients:
- 4 small sweet potatoes
- 1/4 teaspoon salt
- 3/4 teaspoon dried thyme
- 1/4 teaspoon pepper
Directions:
- Scrub and peel potatoes and cut into 3/4 inch slices.
- Steam over boiling water for 25 minutes or until soft.
- Place them into a bowl and mash with a fork or potato masher.
- Stir in seasonings and serve.
Makes 4 servings.
