FRUIT KABOBS

Ingredients:
- In season fruit (pick three or four)
- Strawberries
- Watermelon Chunks
- Seedless grapes
- Apples
- Blueberries
- Pears
- Bananas
- Peaches
- Plums
- Oranges
- Cantaloupe
- Honeydew
- Fresh lemon juice
- Kabob sticks
- 1 whole pineapple
- 1 bag sugar-free chocolate chips
- ½ Tbsp. “I Can’t Believe It’s Not Butter”
- 1 Ziplock Bag
- Kitchen Scissors
- Drill and a very small drill bit
Directions:
- Clean and cut fruit to like sizes.
- Squirt some lemon juice on top of the fruit to prevent it from browning.
- Stick all different kinds of fruit pieces on the sticks; be sure to leave about 2 inches of the stick to hold.
- Melt chocolate chips in a double boiler, add the butter and stir.
- Put melted chocolate into a ziplock bagand snip the very corner off the bag with the kitchen scissors.
- Drip the chocolate over the fruit.
- Chill until chocolate is set.
- Using the drill and bit, drill holes around the outside of the whole pineapple.
- Once the kabobs are chilled, place each kabob into one of the drilled holes.
The end result: a beautiful, bariatric friendly centerpiece.
